- 1 banana, mashed
- 1 egg
- 1/3 cup oats
- 1/2 tsp vanilla extract
- 1 tbsp cocoa powder
- 1/3 cup fresh strawberries
- 1/3 cup Greek yoghurt
- 1 tbsp honey (or maple syrup)
Instructions
- Place banana into a bowl and mash. Add oats, egg, vanilla and cocoa powder. Mix to combine.
- Heat a frypan on medium/high heat. Add a drizzle of olive oil and pour the oat mixture in. Scramble occasionally like eggs until cooked.
- In a bowl, add cooked oat mixture, yoghurt and strawberries. Drizzle with honey to serve.
