- 2 punnets of cherry or heirloom tomatoes
- 1 large (continental) cucumber or two Lebanese cucumbers
- 1 handful of mint
- 1 drizzle of balsamic vinegar
Instructions
- Chop cucumber, and mint. Chop heirloom tomatoes in quarters. Place in salad bowl.
- Add salt, pepper, and drizzle with balsamic vinegar. Toss well. Serve and enjoy!

Don’t fall into the trap of making the same old boring salads. This Chopped Heirloom tomato salad uses only four ingredients but will make you look fancy and gourmet.I know! It’s easy to fall into the pattern of making the same old (boring) salads with…. lettuce – tomato – carrot – cucumber. But by using the same number of ingredients, you can make seriously sexy salads – that make people say “wow” and “yum”! Healthy eating doesn’t need to be fussy. Just keep it simple with good ingredients and try new combinations.
- Mix it up by adding in olives or soft cheese like feta or buffalo mozzarella!
- Just use cherry tomatoes if you don’t have heirloom tomatoes.
- Chop veggies into smaller than bite-size pieces. This makes it much easier to eat.
- Don’t love mint? Use any other herbs that tickle your fancy!
