Seedy 4 Ingredient Snack Bites

Ingredients

  • 1 cup pumpkin seeds
  • 1 cup sunflower seeds
  • 50 ml rice malt syrup
  • 50 g chocolate (optional)

Instructions

  1. Line a baking tray with baking paper.
  2. Mix pumpkin seeds, sunflower seeds and rice malt syrup together using a wooden spoon in a bowl until thoroughly combined.
  3. Transfer into a lined baking tray and press down into a 2-3cm (1 inch) thick layer.
  4. Bake for 15 minutes at 180C (350F) degrees.
  5. If using chocolate, melt the chocolate in a small jar in the microwave (~1 min) and then drizzle over the seed bar once it comes out of the oven.
  6. Allow to cool for 10 minutes before placing in the fridge for a further 45 minutes before cutting into squares.

Notes

Omit the chocolate for a kids’ lunch-box friendly snack.
