- 4 ripe avocados
- 3 large punnets of heirloom tomatoes
- 1/2 red onion
- 10 cup mixed leafy greens.
- 1/4 cup extra virgin olive oil
- 2 tbsp balsamic vinegar
- 1 tbsp honey
- 1 tsp dijon mustard
- 1 tsp salt
Instructions
- Chop tomatoes, slice the red onion and cut up the avocado into mouth-size pieces.
- On a large platter, layer the ingredients on top of a bed of leafy greens.
- Serve with sweet and tangy balsamic dressing.
