Avocado + Heirloom Tomato Salad

  • 4 ripe avocados
  • 3 large punnets of heirloom tomatoes
  • 1/2 red onion
  • 10 cup mixed leafy greens.
  • 1/4 cup extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp dijon mustard
  • 1 tsp salt


  1. Chop tomatoes, slice the red onion and cut up the avocado into mouth-size pieces.
  2. On a large platter, layer the ingredients on top of a bed of leafy greens.
  3. Serve with sweet and tangy balsamic dressing.
