Banana-Berry French Toast

Units Scale
  • 1 egg
  • 1 tbsp milk
  • 0.1 tsp cinnamon
  • 2 slices wholegrain bread
  • 1/2 banana, thinly sliced
  • 1/2 cup berries (any kind)
  • 1 tbsp crushed nuts or seeds
  • 1 tbsp honey or maple syrup (optional)


  1. In a bowl, whisk egg, milk and cinnamon.
  2. Coat each slice of bread in egg mixture.
  3. Heat a pan over medium-heat, add a drizzle of extra virgin olive oil and pan-fry for 2-3 minutes on each side or until lightly golden.
  4. Serve with banana, berries and nuts. Drizzle with optional honey and enjoy!


Gluten free option: Use gluten-free bread. Keep french toast, berries, banana, nuts and honey seperate if meal prepping for the week.
