- 300 g dry pasta
- 400 g tin corn, drained
- 400 g tin black beans, drained
- 500 g cooked chicken, shredded
- 1 cup coriander
- 2 tbsp extra virgin olive oil
- 1 lime
- 2 tsp Mexican seasoning
Instructions
- Cook pasta per packet instructions.
- Once the pasta is cooked, add into a bowl with corn, beans, chicken and coriander. Drizzle with olive oil, lime and season with Mexican seasoning. Mix to combine before serving.
