Pulled Chicken Chipotle Pasta Salad

Units Scale
  • 300 g dry pasta
  • 400 g tin corn, drained
  • 400 g tin black beans, drained
  • 500 g cooked chicken, shredded
  • 1 cup coriander
  • 2 tbsp extra virgin olive oil
  • 1 lime
  • 2 tsp Mexican seasoning


  1. Cook pasta per packet instructions.
  2. Once the pasta is cooked, add into a bowl with corn, beans, chicken and coriander. Drizzle with olive oil, lime and season with Mexican seasoning. Mix to combine before serving.
