Classic Pumpkin + Feta Salad

Units Scale
  • 1 kg pumpkin, chopped into bite sized pieces
  • 1 red onion, chopped
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 1/4 cup pine nuts
  • 5 cup rocket leaves (or mixed leafy greens)
  • 100 g feta, crumbled


  1. Preheat oven to 180c/355F fan forced.
  2. Add pumpkin and onion to a lined baking tray. Drizzle with oil and add salt. Bake in oven for 30 minutes.
  3. Remove from oven, add pine nuts and bake for another 5 minutes.
  4. Serve with rocket, crumble with feta and finish with balsamic glaze (balsamic vinegar will work too) and extra virgin olive oil.
