- 150 g dry pasta
- 3 tbsp extra virgin olive oil
- 2 tbsp red wine vinegar
- 1/2 tsp dijon mustard
- 1 tsp honey
- 400 g tin chickpeas, drained
- 1 cucumber, chopped
- 1/2 cup olives, sliced
- 1/3 cup sun-dried tomato strips
- 1/2 red onion, thinly sliced
- 50 g feta cheese, roughly chopped
Instructions
- Cook pasta per pack instructions, drain and set aside.
- To make the salad dressing, combine extra virgin olive oil, red wine vinegar, dijon mustard and honey in a small jar.
- Add pasta, chickpeas, cucumber, feta, olives, sun-dried tomatoes and onion to a bowl. Drizzle with dressing and toss before serving.
