Greek Pasta Salad


  • Total Time: 15 minutes

Ingredients

Units Scale
  • 150 g dry pasta
  • 3 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 tsp dijon mustard
  • 1 tsp honey
  • 400 g tin chickpeas, drained
  • 1 cucumber, chopped
  • 1/2 cup olives, sliced
  • 1/3 cup sun-dried tomato strips
  • 1/2 red onion, thinly sliced
  • 50 g feta cheese, roughly chopped

Instructions

  1. Cook pasta per pack instructions, drain and set aside.
  2. To make the salad dressing, combine extra virgin olive oil, red wine vinegar, dijon mustard and honey in a small jar.
  3. Add pasta, chickpeas, cucumber, feta, olives, sun-dried tomatoes and onion to a bowl. Drizzle with dressing and toss before serving.
