Pearl Couscous Salad with Honey Mustard Dressing

Units Scale
  • 1 cup pearl couscous
  • 200 g cherry tomatoes, finely chopped
  • 1 cucumber, finely chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup pitted kalamata olives, roughly chopped
  • 1/4 cup fresh parsley leaves, finely chopped
  • 1/4 cup fresh basil leaves, finely chopped
  • 1 lemon, 30ml of juice and zested
  • 1 tsp dijon mustard
  • 1/4 cup extra virgin olive oil
  • 1 1/2 tbsp honey
  • 1/4 cup flaked almonds, toasted


  1. Cook pearl couscous per packet instructions.
  2. Meanwhile, chop the fresh ingredients and combine the tomatoes, cucumber, onion, olives, parsley, basil and lemon zest in a bowl.
  3. Make the dressing by combining the lemon juice, mustard, olive oil and honey in a jar and shake well.
  4. Add the cooked couscous to the vegetables and mix well, top with toasted almonds and dressing to serve.
