- 70 g halloumi
- 2 slices of bread
- 1 tbsp pesto
- 1/4 avocado thinly sliced
- 1/4 red onion, thinly sliced
- 1 cup rocket
Instructions
- Heat a frypan onto medium-high heat and add a dash of olive oil. Once hot, add halloumi and cook until each side is golden brown (approx 3 minutes a side).
- Meanwhile, spread the pesto onto each slice of bread and add avocado, onion, rocket and then cooked halloumi and top with another slice.
- Toast in a sandwich press until toasted to your liking.
