Pesto Halloumi Sandwich

  • 70 g halloumi
  • 2 slices of bread
  • 1 tbsp pesto
  • 1/4 avocado thinly sliced
  • 1/4 red onion, thinly sliced
  • 1 cup rocket


  1. Heat a frypan onto medium-high heat and add a dash of olive oil. Once hot, add halloumi and cook until each side is golden brown (approx 3 minutes a side).
  2. Meanwhile, spread the pesto onto each slice of bread and add avocado, onion, rocket and then cooked halloumi and top with another slice.
  3. Toast in a sandwich press until toasted to your liking.
