The BEST Nachos

Units Scale
  • 250 g Fable plant based braised beef
  • 2 tbsp Smokey bbq sauce
  • 70 g corn chips
  • 1/2 cup shredded cheese
  • 1 avocado
  • 1/2 lime, juiced
  • 1/2 cucumber, finely chopped
  • 100 g tomatoes, finely chopped
  • 1/4 red onion, finely chopped
  • 1/2 baby cos, finely sliced
  • 1/2 cup fresh coriander, roughly chopped
  • 2 tbsp pickled jalapeños, optional
  • 1 tsp hot sauce, optional


  1. Heat a broiler/grill oven to medium/high heat.
  2. Meanwhile, heat a frypan on a medium/high heat and add the plant-based beef. After about 1-2 minutes, add the bbq sauce and saute for a further 3 or so minutes until it starts to brown and you can break it apart with a wooden spoon.
  3. While the ‘beef’ is cooking, place the corn chips on a baking tray and cover with shredded cheese. Cook in the grill/oven for 2 minutes or until the cheese is melted and slightly browned.
  4. Make the guacamole by crushing the avocado and mixing with lime juice, season with salt and pepper.
  5. Remove the corn chips from the oven and start assembling the nachos by placing the ‘beef’ and fresh ingredients on top of the corn chips and the guacamole in a large dollop for easy access.
  6. Top with optional pickled jalapeños and your favourite hot sauce for some extra spice.


  • Fable is an awesome plant-based pulled meat substitute that you can flavour any way you like. You can always switch this up for another option you like or if you prefer, you can use meat here instead.
