- 2 bananas
- 2 free range eggs
- 1/2 cup plain rolled oats (or quick oats)
- 1 tsp cinnamon
- 100 g cream cheese
- 2 tbsp milk
- 1 cup fresh berries
- 2 tbsp maple syrup
Instructions
- Place oats, eggs, cinnamon, and bananas into a blender or food processor. Blitz into smooth.
- Heat a greased frying pan to medium-high. Pour in pancake batter, making about three pancakes per frying pan. Once bubbles appear and brown on the one side, flip. Cook for another minute or until cooked through.
- Meanwhile, add cream cheese and milk to the blender and blitz till smooth. Place in a ziplock bag, make a small hole in the one corner so you can pipe the mix out.
- Stack the pancakes between layers of fresh berries and cream cheese mix. Finish with a hot cross bun X on top. Serve with maple syrup.
Notes
- Dairy-free option: Use lactose-free milk and cream cheese.
- Pregnancy: You can eat fresh cream cheese while pregnant. Check the use-by date and ensure dairy is pasteurised.
- Use thick yoghurt instead of the cream cheese/milk mixture if you like.
- You can use frozen berries. It’s not the same, but it’ll do the trick. Simply defrost before using.
- You can also serve with seeds, nuts, muesli or yoghurt.
