Potato Gem Salad

- 150 g potato gems
- 2 eggs, boiled and halved
- 4 cup baby cos/iceberg lettuce
- 1 cup cherry tomatoes, chopped
- 1 cucumber, chopped
- 2 tbsp parmesan cheese, shaved
- 1/2 avocado, chopped
- 4 tbsp Caesar dressing
Instructions
- Cook potato gems per pack instructions.
- Add water into a small saucepan and bring to boil, add eggs and cook approx 5-6 minutes in boiling water for soft boiled. Place in cold water after cooking, peel and set aside.
- Meanwhile, combine the vegetables in a bowl, add the cooked egg, potato gems and drizzle with dressing to serve.
Notes
Optional: Add shredded and cooked chicken for extra protein or use instead of eggs.
