Cheesy Bean & Toasted Sourdough Bake

- 1/4 cup extra virgin olive oil
- 1 brown onion, finely chopped
- 4 anchovy fillets
- 3 cloves garlic, minced
- 1 400g tin of whole peeled tomatoes
- 1/4 cup pizza sauce (or tomato paste)
- 2 400g tin white/cannellini beans
- 2 cup baby spinach leaves
- 2 cup shredded pizza cheese
- 4 slices of sourdough bread, toasted
Instructions
- Preheat oven to 220C/428F.
- On a stove, place a large oven-proof skillet on medium/high heat. Add olive oil and once hot add in onion and anchovies. Saute for 3 mins. Then add garlic and pizza sauce. Saute for a further 2-3 mins, stirring occasionally.
- Add tomatoes, beans and spinach. Use a wooden spoon to mash the tomatoes so they are well combined with the rest of the ingredients. Cook for a further 3 minutes.
- Cover with shredded cheese and place into the oven for 8-10 minutes until golden brown on top.
- Serve with toasted bread.
Notes
If you don’t like anchovies, you can use olive tapenade or finely chopped Kalamata olives.
