Super Quick Spring Veg Frittata

- 10 large eggs
- 1/2 cup milk
- 100 g feta cheese, crumbled with extra to sprinkle on top at the end
- 250 g asparagus, cut into 2cm pieces
- 1 head broccoli, chopped into bite sized pieces
- 1 cup frozen peas
- 3 spring onions, finely chopped
- 1/4 cup fresh basil leaves
Instructions
- Preheat the oven to 180c(355f) fan force.
- In a large mixing bowl, crack the eggs, add the milk and feta and whisk together until well combined.
- Then add the asparagus, broccoli, peas and spring onions and a generous crack of black pepper and some salt.
- Pour into a medium/large baking dish/skillet and bake in the oven for 25 minutes or until cooked through and golden brown.
- Serve with fresh basil leaves and extra feta crumbled on top.

- This serves about 5 adults and freezes really well for up to 3 months.
