Best Healthy Bran Muffin (nut-free, lunchbox friendly, meal prep!)

- 1 1/2 cup bran cereal*
- 1 cup self-raising flour
- 2 tsp baking powder
- 1 tbsp cinnamon
- 10 Medjool dates pitted
- 2 tbsp honey (or maple syrup)
- 2 tsp vanilla
- 2 free-range eggs
- 1/3 cup extra virgin olive oil
- 1/2 cup plain Greek yoghurt
Instructions
- Preheat oven to 190c/375f.
- Mix bran with one cup of very hot or boiling water. Set aside.
- Combine dry ingredients including flour, baking powder, cinnamon and 1/8 teaspoon of salt
- In a food processor, add dates, two tablespoons of boiling water, vanilla, eggs, yoghurt and oil. Blitz until smooth (there will still be specks from the dates, that’s OK).
- Pour mixture into the bran bowl. Add flour. Mix all ingredients. Add crushed nuts if you like. Spoon mix evenly into a greased muffin tray. Bake for 18-22 minutes.

My best healthy bran muffin are a new healthy snack idea and they’re seriously great for lunchboxes as they’re nut-free. Make a batch of this bran muffin recipe ahead of a busy week for healthy meal prep.
- *For the bran cereal, I just used Homebrand bran sticks. You can also use something like All-Bran cereal.
- You’ll need a muffin tray for this recipe.
- You can add 1/2 cup of crushed nuts like pecans if you like. Skip if these muffins are for school lunchboxes.
- These will healthy bran muffins freeze well. Or you can store them in an air-tight container for up to 3 days.
