Breakfast Tacos

Units Scale
  • 1 tbsp extra virgin olive oil
  • 4 eggs
  • 4 small tortillas
  • 1/2 cup tomato, diced
  • 1 small avocado
  • 2 tbsp red onion, sliced
  • 1 lemon, juiced
  • 1/4 cup cup coriander, roughly chopped
  • 0.1 tsp salt
  • 0.1 tsp pepper
  • 2 tsp hot sauce (optional)


  1. Heat a frypan on a medium/high heat. Add a dash of olive oil.
  2. Crack eggs into a bowl, whisk until combined and then pour into frypan, stirring occasionally until scrambled (3-5 mins).
  3. Meanwhile, mash the avocado with lemon juice and season with salt and pepper.
  4. Assemble the tacos by spreading avocado first, then top with cooked egg, tomatoes, onion and coriander. Drizzle with your favourite hot sauce to serve.


Use sweet chilli sauce if you prefer instead of hot sauce.
