Cheesy Bean & Toasted Sourdough Bake

Ingredients

  • 1/4 cup extra virgin olive oil
  • 1 brown onion, finely chopped
  • 4 anchovy fillets
  • 3 cloves garlic, minced
  • 1 400g tin of whole peeled tomatoes
  • 1/4 cup pizza sauce (or tomato paste)
  • 2 400g tin white/cannellini beans
  • 2 cup baby spinach leaves
  • 2 cup shredded pizza cheese
  • 4 slices of sourdough bread, toasted

Instructions

  1. Preheat oven to 220C/428F.
  2. On a stove, place a large oven-proof skillet on medium/high heat. Add olive oil and once hot add in onion and anchovies. Saute for 3 mins. Then add garlic and pizza sauce. Saute for a further 2-3 mins, stirring occasionally.
  3. Add tomatoes, beans and spinach. Use a wooden spoon to mash the tomatoes so they are well combined with the rest of the ingredients. Cook for a further 3 minutes.
  4. Cover with shredded cheese and place into the oven for 8-10 minutes until golden brown on top.
  5. Serve with toasted bread.

Notes

If you don’t like anchovies, you can use olive tapenade or finely chopped Kalamata olives.
