Chocolate Banana Bread

- 1 cup all-purpose flour
- 1 1/2 tsp baking soda
- 1/2 cup plain rolled oats
- 1/4 cup cacao powder
- 2 large eggs (I use free range)
- 2 medium, overripe bananas (1 cup mashed)
- 1/2 cup plain Greek yoghurt
- 1/4 cup maple syrup
- 1/4 cup dried dates
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 175c/350F.
- In a large bowl, combine flour, oats, cacao powder and baking soda. Stir until well combined.
- Place the dates in a food processor and blitz until tiny small pieces. Add a dash of water (about 2 teaspoons) if needed.
- Add bananas, Greek yoghurt and maple syrup to blender and blitz for 10 seconds or until combined.
- Lightly beat the eggs in a medium mixing bowl. Add the wet ingredients to the bowl.
- Pour the wet ingredients into the dry ingredients and add the chocolate chips. Stir gently. Don’t over mix.
- Pour the batter into a lightly grease a 9” x 5” (23cm x 13cm) pan. Spread the mix evenly and bake for 35-40 minutes.
- Remove from oven. Cool for 10 minutes before placing onto a cooling rack.
