Chocolate Banana Bread


  • Total Time: 10 minutes

Ingredients

  • 1 cup all-purpose flour
  • 1 1/2 tsp baking soda
  • 1/2 cup plain rolled oats
  • 1/4 cup cacao powder
  • 2 large eggs (I use free range)
  • 2 medium, overripe bananas (1 cup mashed)
  • 1/2 cup plain Greek yoghurt
  • 1/4 cup maple syrup
  • 1/4 cup dried dates
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat oven to 175c/350F.
  2. In a large bowl, combine flour, oats, cacao powder and baking soda. Stir until well combined.
  3. Place the dates in a food processor and blitz until tiny small pieces. Add a dash of water (about 2 teaspoons) if needed.
  4. Add bananas, Greek yoghurt and maple syrup to blender and blitz for 10 seconds or until combined.
  5. Lightly beat the eggs in a medium mixing bowl. Add the wet ingredients to the bowl.
  6. Pour the wet ingredients into the dry ingredients and add the chocolate chips. Stir gently. Don’t over mix.
  7. Pour the batter into a lightly grease a 9” x 5” (23cm x 13cm) pan. Spread the mix evenly and bake for 35-40 minutes.
  8. Remove from oven. Cool for 10 minutes before placing onto a cooling rack.
