Greek Style Baked Potato


  • Total Time: 50 minutes
  • Yield: 2 1x

Ingredients

  • 2 large brushed potatoes
  • 2 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 250 g lamb mince
  • 1/2 cup tzatziki
  • 8 Kalamata pitted olives, sliced
  • 1/2 cucumber, finely chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup feta, roughly chopped

Instructions

  1. Preheat oven to 220C fan forced (430F).
  2. Scrub potatoes pat dry. Pierce the potato using a fork to create small holes across the surface.
  3. Rub potato with 1 tbsp olive oil and season with salt. Bake for roughly 45 minutes.
  4. Heat a frying pan over medium/high heat. Drizzle with olive oil and add meat. Season with salt and pepper. Cook for 5-10 minutes until meat is cooked through. Breaking apart mince so it’s a crumbly consistency.
  5. Once the potato is cooked, cut it in half and add lamb mince. Top with salad and tzatziki. Enjoy!

Notes

If meal prepping, store the salad separately and use within 2-3 days.
