Mango Sorbet (One ingredient Ice-cream)

Instructions

  1. Freeze mango cheeks (and any additional flesh and juice).
  2. Place frozen mango in a food processor for a minute – or until smooth ‘ice-cream’ texture. Enjoy!

I am obsessed with this simple, one ingredient mango sorbet. It’s my go-to healthy snack when it’s hot outside or when I’m craving something sweet after dinner.If I have a BBQ in summer, I will blitz up several mangoes for dessert. This is partly because I can’t bake!… But I reckon my friends and family also love having a healthier dessert option. This one-ingredient mango sorbet is a healthy treat that you can make in minutes, the kids will love it (and think it’s real ice-cream)… and this ice-cream is naturally vegan, paleo, gluten-free, refined-sugar free and everything else free.If you like this recipe, you may also like my Banana Nice-Cream recipe. Lots of people wonder “is fruit fattening?” It’s NOT. I think we would all be healthier if we snacked on fruit more – and ate the recommended 2 pieces of fruit per day (only 4% of people currently do!)I almost feel silly writing this up as a ‘recipe’ because it’s that easy. But, I wouldn’t want you to miss out on this one-ingredient mango sorbet (that tastes so good!), so here goes:
  • You could add a squeeze of lime (for more acidity) before you blitz the mangoes. Or top the mango sorbet with fresh fruit, coconut flakes or seeds.
  • I get the ‘imperfect’ mangoes (wonky ones) from Harris Farm to reduce food waste and my grocery bill. Win-win. I used to buy the pre-frozen mango but it never tasted as good.
  • I freeze my mangoes in a Tupperware container and write how many mangoes go in. So it’s easy to portion size. Four mangoes = Four serves of mango sorbet.
