Potato Gem Salad

  • Total Time: 20 minutes

  • Diet: Vegetarian


Units Scale
  • 150 g potato gems
  • 2 eggs, boiled and halved
  • 4 cup baby cos/iceberg lettuce
  • 1 cup cherry tomatoes, chopped
  • 1 cucumber, chopped
  • 2 tbsp parmesan cheese, shaved
  • 1/2 avocado, chopped
  • 4 tbsp Caesar dressing


  1. Cook potato gems per pack instructions.
  2. Add water into a small saucepan and bring to boil, add eggs and cook approx 5-6 minutes in boiling water for soft boiled. Place in cold water after cooking, peel and set aside.
  3. Meanwhile, combine the vegetables in a bowl, add the cooked egg, potato gems and drizzle with dressing to serve.


Optional: Add shredded and cooked chicken for extra protein or use instead of eggs.
