Rainbow Summer Salad

Ingredients:

  • 4 cups mixed leaves
  • 1 large cucumber, chopped
  • 1 punnet of yellow tomatoes, chopped
  • Carrot, grated or shredded (I buy this already done)
  • 1/2 red onion, sliced
  • 1 avocado, chopped
  • Pomegranate seeds from 1/2 the fruit
  • Salad dressing ingredients
  • 1/2 cup extra virgin olive oil
  • 1/4 cup white wine vinegar
  • 1/4 cup balsamic vinegar
  • 1 heaped teaspoon Dijon mustard
  • 1 tablespoon of pomegranate molasses (optional)

Instructions:

  • 1.Combine all salad ingredients in a serving bowl.
  • 2.Combine the salad dressing ingredients in a jar and shake well. Serve!
