Smashed Chickpea and Chicken Sandwich

Units Scale
  • 1/3 cup tin chickpeas, drained and rinsed
  • 25 g feta cheese
  • 1 tbsp Greek yoghurt
  • 2 tbsp red onion, diced
  • 1 tsp extra virgin olive oil
  • 1 tsp paprika (or any other seasoning)
  • 2 slices of wholegrain bread
  • 100 g cooked chicken, skin removed
  • 1/2 cup baby spinach or rocket


  1. In a bowl, mash chickpeas, feta, yoghurt, onion, olive oil and paprika until well combined.
  2. Assemble the sandwich by spreading with chickpea mix, chicken and spinach on bread.
  3. Place the sandwich in a sandwich press until lightly toasted before serving.


You can cook the chicken yourself or buy freshly cooked BBQ chicken and shred the chicken, removing bones and skin. Skip the chicken to make this recipe vegetarian. Use gluten-free bread for a gluten free option.
