Super Quick Spring Veg Frittata

Units Scale
  • 10 large eggs
  • 1/2 cup milk
  • 100 g feta cheese, crumbled with extra to sprinkle on top at the end
  • 250 g asparagus, cut into 2cm pieces
  • 1 head broccoli, chopped into bite sized pieces
  • 1 cup frozen peas
  • 3 spring onions, finely chopped
  • 1/4 cup fresh basil leaves


  1. Preheat the oven to 180c(355f) fan force.
  2. In a large mixing bowl, crack the eggs, add the milk and feta and whisk together until well combined.
  3. Then add the asparagus, broccoli, peas and spring onions and a generous crack of black pepper and some salt.
  4. Pour into a medium/large baking dish/skillet and bake in the oven for 25 minutes or until cooked through and golden brown.
  5. Serve with fresh basil leaves and extra feta crumbled on top.



  • Use whatever milk you have on hand here.
  • This serves about 5 adults and freezes really well for up to 3 months.
