Crispy Parmesan Cauliflower Nuggets

- 350 g cauliflower (equivalent to 1 large head), cut into bite-sized florets
- 1 tbsp extra virgin olive oil
- 1/4 cup parmesan cheese
- 2 tbsp chopped parsley (optional)
- 1 1/2 tsp smoked paprika (optional)
Instructions
- Preheat oven to 200c/390F.
- Place florets in a large bowl, drizzle with extra virgin olive oil, sprinkle with paprika and toss well. Place onto a lined baking tray and place in the oven.
- Cook for 25 – 30 minutes. Remove from oven and sprinkle with Parmesan cheese. Return to over for 5 minutes.
- Garnish with parsley before devouring!
