		Greek Style Baked Potato

			- 2 large brushed potatoes
- 2 tbsp extra virgin olive oil
- 1/4 tsp salt
- 250 g lamb mince
- 1/2 cup tzatziki
- 8 Kalamata pitted olives, sliced
- 1/2 cucumber, finely chopped
- 1/4 red onion, finely chopped
- 1/4 cup feta, roughly chopped
Instructions
- Preheat oven to 220C fan forced (430F).
- Scrub potatoes pat dry. Pierce the potato using a fork to create small holes across the surface.
- Rub potato with 1 tbsp olive oil and season with salt. Bake for roughly 45 minutes.
- Heat a frying pan over medium/high heat. Drizzle with olive oil and add meat. Season with salt and pepper. Cook for 5-10 minutes until meat is cooked through. Breaking apart mince so it’s a crumbly consistency.
- Once the potato is cooked, cut it in half and add lamb mince. Top with salad and tzatziki. Enjoy!
Notes
If meal prepping, store the salad separately and use within 2-3 days.
