		Pearl Couscous Salad with Honey Mustard Dressing

			- 1 cup pearl couscous
 - 200 g cherry tomatoes, finely chopped
 - 1 cucumber, finely chopped
 - 1/4 red onion, finely chopped
 - 1/4 cup pitted kalamata olives, roughly chopped
 - 1/4 cup fresh parsley leaves, finely chopped
 - 1/4 cup fresh basil leaves, finely chopped
 - 1 lemon, 30ml of juice and zested
 - 1 tsp dijon mustard
 - 1/4 cup extra virgin olive oil
 - 1 1/2 tbsp honey
 - 1/4 cup flaked almonds, toasted
 
Instructions
- Cook pearl couscous per packet instructions.
 - Meanwhile, chop the fresh ingredients and combine the tomatoes, cucumber, onion, olives, parsley, basil and lemon zest in a bowl.
 - Make the dressing by combining the lemon juice, mustard, olive oil and honey in a jar and shake well.
 - Add the cooked couscous to the vegetables and mix well, top with toasted almonds and dressing to serve.
