Egg Salad Sandwich

  • 2 hard boiled eggs
  • 2 tbsp cottage cheese
  • 1/4 red onion or spring onion, finely chopped
  • 1 tsp extra virgin olive oil
  • 1/2 cup rocket
  • 2 slices wholemeal bread
  • 0.1 tsp salt
  • 0.1 tsp pepper


  1. Mash boiled eggs, cottage cheese, red onion and olive oil with a fork until desired consistency.
  2. Spread onto bread, top with rocket and season with salt and pepper to taste.
