Mexican Sweet Potato Boats Topped with Feta

  • 2 large sweet potatoes, skin on
  • 1 tsp salt
  • 200 g black beans
  • 200 g sweet corn
  • 100 g feta cheese, crumbled
  • 1 tbsp hot sauce
  • 1/4 cup parsley, chopped


  1. Preheat the oven to 200c/390f. Slice sweet potatoes in half lengthways. Place on a lined baking tray and sprinkle with salt. Bake in oven for 45 minutes.
  2. Remove from oven and top with black beans, sweet corn and feta. Return to oven and bake for further 15 minutes.
  3. Once the feta has lightly browned, remove from oven. Finish with a splash of your favourite hot sauce and fresh parsley.


These healthy sweet potato boats are stuffed with fibre-rich beans, corn and topped with the goodness of feta cheese. Enjoy this easy-to-make meal for meat-free Monday or anytime you want to feel good.
